Fall time has arrived! I love walking through the stores, seeing the fall decorations, and smelling the many aromas of autumn. One of my all time favorite things to do during the fall was to bake with my grandmother! I can still smell her pumpkin cookies while they were cooling. I’m breaking all the rules by sharing her yummy recipe for these fluffy, scrumptious pumpkin cookies. Give them a try! We’d love to hear how yours turn out!
2 ½ cups all-purpose flour
½ teaspoon cinnamon
½ teaspoon ground nutmeg
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
½ cup butter (1 stick), softened, not melted.
1 cup pumpkin (true pumpkin, not pumpkin pie filling)
1 teaspoon vanilla extract
Preheat oven to 350 degrees °F.
Combine flour, cinnamon, nutmeg, salt, baking powder and baking soda in a medium bowl. In a large bowl, mix sugar and softened butter until well blended. Mix in pumpkin, egg, and vanilla and mix until smooth. Gradually add flour mixture. Drop rounded spoonful onto greased baking sheets.
Bake for 15-18 minutes or until the outside edges are slightly firm. Cool for 2 minutes on cookie sheet, then transfer to wire racks to cool completely. Drizzle glaze frosting over cookies.
Mix together 2 cups of sifted powdered sugar, 3 tablespoons milk, 1 tablespoon of melted butter and 1 teaspoon vanilla extract in a small bowl until smooth.
